Description
A quick and delicious vegan lo mein packed with colorful veggies, ready in just 15 minutes.
Ingredients
- 8 oz lo mein noodles
 - 2 tbsp canola oil
 - 1 bell pepper, sliced
 - 1 carrot, julienned
 - 1 cup broccoli florets
 - 3 tbsp soy sauce
 - 1 tsp sesame oil
 - 1 tbsp maple syrup
 - Green onions, for garnish
 - Sesame seeds, for garnish
 
Instructions
- Cook the lo mein noodles according to package instructions, then drain and rinse.
 - In a large skillet or wok, heat the canola oil over high heat.
 - Add bell pepper, carrot, and broccoli; stir-fry until tender-crisp.
 - Toss in the cooked noodles and add soy sauce, sesame oil, and maple syrup.
 - Mix everything thoroughly and cook for an additional minute.
 - Serve hot, garnished with green onions and sesame seeds.
 
Notes
Feel free to use any leftover vegetables and adjust the sauce to your taste.
