Description

A delicious and easy dish featuring tender chicken, sweet pineapple, and vibrant bell peppers, all cooked to crispy perfection in the air fryer.


Ingredients

  • 1 tablespoon grated fresh ginger
  • 4 minced garlic cloves
  • 1/4 cup teriyaki sauce
  • 1/4 cup barbecue sauce
  • 2 cups cut-up fresh pineapple
  • 1 red bell pepper, chopped into 1-inch pieces
  • 1 pound chicken breasts, boneless and skinless, chopped into cubes


Instructions

  1. Toss the ginger, garlic, teriyaki sauce, and barbecue sauce together in a big bowl. Mix them well.
  2. Drop in the pineapple, chicken, and bell pepper. Coat everything with the sauce mix.
  3. Scoop the coated chicken mix into your air fryer basket. Set the temperature to 400°F and cook for 11 minutes.
  4. Pause to give it a quick stir halfway through to help everything cook evenly.
  5. Finish cooking until the chicken reaches an internal temperature of 165°F.
  6. Spoon your hot chicken and veggies over a pile of rice, then dig in!

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for longer storage. Reheat in the microwave or air fryer.
