Description

A creamy, tangy chicken dish that is easy to prepare and perfect for weeknight dinners or casual gatherings.


Ingredients

  • 1.5–2 lb boneless, skinless chicken breasts or thighs
  • 8 oz softened cream cheese
  • 1 packet (1 oz) ranch or Italian dressing mix
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp mayonnaise (optional)


Instructions

  1. If desired, sear the chicken in a skillet over medium-high heat for 2–3 minutes per side.
  2. Transfer chicken to a slow cooker and pour chicken broth and seasoning over the top.
  3. Cook on LOW for 3.5–4 hours or HIGH for 2–2.5 hours until the internal temperature reaches 165°F (74°C).
  4. Remove chicken, shred with two forks, and stir in softened cream cheese off the heat until smooth.

Notes

The sauce can be thickened with a cornstarch slurry if needed. Serve over rice, in rolls, or over pasta.
