Description

Delightful muffins filled with sweet apple chunks and warm cinnamon, topped with a crunchy streusel.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 cups diced apples (mix of tart and sweet)
  • 1/2 cup brown sugar (for streusel topping)
  • 1/4 cup all-purpose flour (for streusel topping)
  • 1 teaspoon cinnamon (for streusel topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In one bowl, mix together the dry ingredients: flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine the wet ingredients: melted butter, milk, and eggs.
  4. Gently combine the wet and dry mixtures until just combined.
  5. Fold in the diced apples carefully.
  6. For the streusel topping, combine brown sugar, flour, and cinnamon with cold butter until crumbly.
  7. Spoon the batter into muffin liners, sprinkle with streusel, and bake for 20-25 minutes until golden and a toothpick inserted comes out clean.

Notes

Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Reheat as needed.
