Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 2 cups diced apples (mix of tart and sweet)
- 1/2 cup brown sugar (for streusel topping)
- 1/4 cup all-purpose flour (for streusel topping)
- 1 teaspoon cinnamon (for streusel topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In one bowl, mix together the dry ingredients: flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, combine the wet ingredients: melted butter, milk, and eggs.
- Gently combine the wet and dry mixtures until just combined.
- Fold in the diced apples carefully.
- For the streusel topping, combine brown sugar, flour, and cinnamon with cold butter until crumbly.
- Spoon the batter into muffin liners, sprinkle with streusel, and bake for 20-25 minutes until golden and a toothpick inserted comes out clean.
Notes
Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Reheat as needed.
