Description

A warm and comforting apple coffee cake with a crunchy cinnamon streusel topping, perfect for brunch or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 cup diced apples
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup cold butter, for streusel


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar.
  3. Add eggs one at a time, then mix in the milk and diced apples.
  4. In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Prepare the streusel by mixing brown sugar, flour, and cold butter until crumbly.
  7. Pour half the batter into a greased baking pan, add a layer of streusel, then top with the remaining batter.
  8. Add more streusel on top.
  9. Bake for 45 minutes or until a toothpick comes out clean from the center.
  10. Let it cool slightly before serving.

Notes

Best served warm or at room temperature. Pairs well with ice cream or coffee.
