Description

Cozy, slightly rustic quick bread with tender apples and a crunchy oat-and-butter streusel.


Ingredients

  • 1 ½ – 2 cups peeled, finely diced apples
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter or oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or yogurt
  • 1 cup rolled oats
  • 1/2 cup brown sugar (for streusel)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, blend butter/oil, sugar, eggs, vanilla, and sour cream/yogurt.
  4. Fold the dry ingredients into the wet ingredients just until combined.
  5. Gently fold in the diced apples.
  6. Spoon the batter into the prepared pan.
  7. Sprinkle oat-cinnamon streusel on top.
  8. Bake for 50–65 minutes, or until a toothpick in the center comes out with a few moist crumbs.

Notes

To avoid a soggy top, use chilled streusel and fold in apples gently.
