Ingredients
- 1 ½ cups graham cracker crumbs

- 1 cup oats
- ¼ cup brown sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs, sugar, and melted butter; press into mini muffin tin.
- Mix cream cheese, sugar, and eggs until smooth; add vanilla, and pour over crust.
- Bake for 20 minutes or until set but slightly jiggly.
- Sauté diced apples with cinnamon and sugar until tender.
- Top cheesecake bites with apple mixture and sprinkle with oats and brown sugar.
- Bake again for 5 minutes to create a crispy finish.
- Cool, refrigerate for 1 hour, then serve.
