Description

Delightful macarons that capture the cozy flavors of warm apple pie, featuring a spiced apple filling and a delicate, chewy texture.


Ingredients

  • 1 cup almond flour
  • 1 1/2 cups powdered sugar
  • 3 large egg whites, room temperature
  • 1/4 cup granulated sugar
  • 1/2 tsp cinnamon
  • 2 cups diced apples
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • Pinch of salt


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, sift together almond flour and powdered sugar.
  3. In another bowl, whip egg whites to soft peaks, then gradually add granulated sugar until stiff peaks form.
  4. Gently fold the almond flour mixture into the meringue until combined.
  5. Pipe the batter onto baking sheets lined with parchment paper and let rest until a skin forms, about 30 minutes.
  6. Bake for 15 minutes, then cool completely.
  7. Meanwhile, sauté diced apples with brown sugar and cinnamon until softened.
  8. Assemble the macarons by sandwiching the apple filling between two shells.

Notes

The macaron shells require resting before baking to form a skin that prevents cracking.
