Description

A delightful dessert combining creamy cheesecake and fresh apricots in flaky fillo pastry.


Ingredients

  • 1 package fillo pastry
  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 4-5 fresh apricots, sliced
  • 1/4 cup melted butter


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Layer fillo sheets in a round baking dish, brushing each layer with melted butter.
  3. In a bowl, mix cream cheese, sugar, eggs, and vanilla until smooth.
  4. Spread the cheesecake mixture in the center of the fillo base.
  5. Top with sliced apricots.
  6. Bake for 30 minutes or until golden brown.
  7. Let cool before serving. Enjoy with whipped cream or ice cream.

Notes

Keep unused fillo sheets covered with a damp towel to prevent drying out. Chill before serving for best texture.
