A delightful dessert combining creamy cheesecake and fresh apricots in flaky fillo pastry.
Ingredients
- 1 package fillo pastry
- 1 cup cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 4-5 fresh apricots, sliced
- 1/4 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- Layer fillo sheets in a round baking dish, brushing each layer with melted butter.
- In a bowl, mix cream cheese, sugar, eggs, and vanilla until smooth.
- Spread the cheesecake mixture in the center of the fillo base.
- Top with sliced apricots.
- Bake for 30 minutes or until golden brown.
- Let cool before serving. Enjoy with whipped cream or ice cream.
Notes
Keep unused fillo sheets covered with a damp towel to prevent drying out. Chill before serving for best texture.
