Ingredients
- 4 medium Carrots, peeled and grated
 - 2 tablespoons Lemon Juice, freshly squeezed
 - 3 tablespoons Olive Oil, extra virgin
 - 1 teaspoon Dijon Mustard
 - 0.5 teaspoon Salt, adjust to taste
 - 0.25 teaspoon Black Pepper, freshly ground, adjust to taste
 - 2 tablespoons Fresh Herbs, chopped parsley or cilantro
 
Instructions
- Prepare the carrots by washing, peeling, and grating them.
 - In a mixing bowl, combine lemon juice, olive oil, and Dijon mustard. Whisk until blended.
 - In a large bowl, add the grated carrots.
 - Pour the dressing over the carrots and toss to coat evenly.
 - Add chopped herbs and toss again.
 - Taste and adjust seasoning if necessary.
 - Let the salad rest for 15-30 minutes before serving.
 - Serve chilled or at room temperature.
