Description

A refreshing and vibrant salad featuring grated carrots, zesty lemon juice, and aromatic herbs, perfect as a side or light main dish.


Ingredients

  • 4 medium Carrots, peeled and grated
  • 2 tablespoons Lemon Juice, freshly squeezed
  • 3 tablespoons Olive Oil, extra virgin
  • 1 teaspoon Dijon Mustard
  • 0.5 teaspoon Salt, adjust to taste
  • 0.25 teaspoon Black Pepper, freshly ground, adjust to taste
  • 2 tablespoons Fresh Herbs, chopped parsley or cilantro


Instructions

  1. Prepare the carrots by washing, peeling, and grating them.
  2. In a mixing bowl, combine lemon juice, olive oil, and Dijon mustard. Whisk until blended.
  3. In a large bowl, add the grated carrots.
  4. Pour the dressing over the carrots and toss to coat evenly.
  5. Add chopped herbs and toss again.
  6. Taste and adjust seasoning if necessary.
  7. Let the salad rest for 15-30 minutes before serving.
  8. Serve chilled or at room temperature.
