Description

Delicious baked chicken chimichangas filled with seasoned chicken, beans, and gooey cheese, offering a healthier alternative to frying.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 6 flour tortillas
  • Cooking spray


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix shredded chicken, black beans, cheese, and seasonings.
  3. Place about â…“ cup of filling onto each tortilla and wrap tightly.
  4. Arrange wrapped chimichangas on a baking sheet, seam-side down.
