Ingredients
- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or pepper jack)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- 6 flour tortillas
- Cooking spray
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix shredded chicken, black beans, cheese, and seasonings.
- Place about â…“ cup of filling onto each tortilla and wrap tightly.
- Arrange wrapped chimichangas on a baking sheet, seam-side down.
- Lightly spray the tops with cooking oil.
- Bake for 25 minutes, or until golden and crispy.
- Let them rest for a few minutes before serving.
