Description

Delicious baked chicken quesadillas filled with savory chicken, oozy cheese, and colorful veggies, perfect for family meals and meal prep.


Ingredients

  • 2 cups cooked, shredded chicken
  • 4 flour tortillas
  • 1 cup shredded jalapeño jack cheese
  • 1 cup shredded cheddar cheese
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Sauté the onion and bell pepper in olive oil until fragrant.
  3. Add shredded chicken, cumin, paprika, salt, and pepper to the skillet and stir until heated through.
  4. Place the chicken mixture and cheese on half of each tortilla, fold them over, and arrange on a baking sheet.
  5. Brush the tops with olive oil.
  6. Bake for 15 minutes or until golden brown.
  7. Serve with guacamole and salsa.

Notes

For extra crispiness, use a wire rack on your baking sheet during baking.
