Ingredients
- 2 cups cooked, shredded chicken
- 4 flour tortillas
- 1 cup shredded jalapeño jack cheese
- 1 cup shredded cheddar cheese
- 1 onion, diced
- 1 bell pepper, diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Sauté the onion and bell pepper in olive oil until fragrant.
- Add shredded chicken, cumin, paprika, salt, and pepper to the skillet and stir until heated through.
- Place the chicken mixture and cheese on half of each tortilla, fold them over, and arrange on a baking sheet.
- Brush the tops with olive oil.
- Bake for 15 minutes or until golden brown.
- Serve with guacamole and salsa.
Notes
For extra crispiness, use a wire rack on your baking sheet during baking.
