Ingredients
- 1 lb ground chicken
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 ½ cups shredded cheese
- 8 taco-sized tortillas
- 2 tbsp taco seasoning
- Fresh cilantro (optional, for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, pan-fry the ground chicken until browned and season with taco seasoning.
- Add black beans and corn, stirring until heated through.
- Fill each tortilla with the chicken mixture and sprinkle with cheese.
- Place them in a baking dish and bake for 15-20 minutes, or until the shells are golden and crispy.
- Serve with fresh toppings like sour cream or pico de gallo.
