Instructions
- Preheat the oven to 400°F (200°C).
- Cut rounds or squares from puff pastry sheets and score a 1/2-inch rim.
- Dock the center to prevent excessive puffing.
- Blind-bake the pastry for 8-10 minutes until edges are golden.
- Cool slightly and add a thin layer of your chosen filling.
- Crack an egg into each well.
- Return to the oven and bake for 6-12 minutes depending on desired yolk doneness.
