Description

A delightful dish where creamy feta cheese melts beautifully amid juicy tomatoes and vibrant spinach, all enveloped by perfectly baked eggs.


Ingredients

  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 4 oz feta cheese, block
  • 4 eggs
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for greasing


Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. Add halved cherry tomatoes and fresh spinach to the dish.
  3. Nestle pieces of feta among the vegetables.
  4. Crack the eggs over the top.
  5. Bake until the eggs are set but still soft, about 15-20 minutes.

Notes

Serve steaming hot with crusty bread for dipping or over arugula for a lighter option.
