Ingredients
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup butter, melted
- 2 eggs
- ¼ cup lemon juice
- 1 tbsp lemon zest
- 1 tbsp poppy seeds
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp salt
- 1 cup powdered sugar
- 2 tbsp lemon juice for glaze
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch pan by lining it with parchment paper or greasing it.
- In a large bowl, whisk together the melted butter, granulated sugar, eggs, lemon juice, lemon zest, and vanilla extract until smooth.
- In another bowl, combine the flour, baking powder, salt, and poppy seeds, then mix well.
- Gently fold the dry mixture into the wet mixture until just combined; do not overmix.
- Spread the batter evenly in the prepared pan and bake for 22 to 26 minutes, or until the edges are golden brown.
- Let the bars cool in the pan for about 15 minutes. Optionally, add a glaze made from powdered sugar and lemon juice.
- Slice the bars and store them in an airtight container for up to 3 days, or refrigerate longer.
Notes
For a thicker bar, use a smaller pan and adjust baking time. Serve dusted with powdered sugar or drizzled with glaze.
