Description

Delightful baked fritters with a sweet and tart rhubarb filling and a warm cinnamon flavor, perfect for spring gatherings.


Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup melted butter


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the milk, eggs, and melted butter.
  4. Combine the wet and dry ingredients, mixing just until combined.
  5. Gently fold in the chopped rhubarb.
  6. Spoon the batter onto the prepared baking sheet.
  7. Bake for 25 minutes or until golden brown and a toothpick comes out clean.
