Ingredients
- 4 medium zucchinis, sliced
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 1 cup breadcrumbs (optional)
- Salt, to taste
- Pepper, to taste
- Fresh herbs (basil or parsley), for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Sprinkle salt on the zucchini slices and let them sit for 15 minutes to draw out excess moisture. Pat dry.
- In a greased baking dish, layer the zucchini slices and a mix of mozzarella and Parmesan cheese, seasoning with salt and pepper.
- If desired, top with breadcrumbs for a crunchy texture.
- Bake in the preheated oven until bubbly and lightly browned, about 30 minutes.
- Garnish with fresh herbs before serving.
