Description

A cozy dish combining tender beef, fresh vegetables, and fluffy biscuits for a hearty meal, perfect for family dinners.


Ingredients

  • 3 Tbsp. Butter
  • 1/2 Medium Onion, Finely Chopped
  • 3 stalks Celery, Thinly Sliced
  • 3 Large Carrots, Peeled and Thinly Sliced
  • 3 cloves Garlic, Minced
  • 6 Tbsp. All-purpose Flour
  • Salt and Pepper, to taste
  • 3 cups Beef Broth
  • 3/4 cup Heavy Cream
  • 3 Tbsp. Chopped Fresh Parsley
  • 3 cups Frozen Sweet Peas
  • 4 cups Shredded or Diced Cooked Beef
  • 3 cups All-purpose Einkorn Flour
  • 1 1/2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1 tsp. Salt
  • 1/4 tsp. Freshly Ground Black Pepper
  • 1/4 tsp. Dried Thyme
  • 1/4 tsp. Dried Rosemary
  • 1/2 tsp. Dried Parsley
  • 8 Tbsp. Cold Butter, Sliced
  • 3/4 cup Buttermilk or more if needed


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Melt the butter over medium heat in a large skillet. Add the chopped onion, celery, and carrots; sauté until tender, about 5-7 minutes.
  3. Add the minced garlic and flour, cooking for an additional minute while stirring constantly.
  4. Gradually whisk in the beef broth and heavy cream, bringing the mixture to a boil while stirring occasionally.
  5. Season with salt and pepper, then stir in the chopped parsley, frozen peas, and cooked beef. Pour the filling into a 13×9-inch baking dish.
  6. To make the biscuit dough, combine the Einkorn flour, baking powder, baking soda, salt, black pepper, thyme, rosemary, and dried parsley in a food processor. Add the sliced cold butter and pulse until the mixture resembles coarse crumbs.
  7. Mix in the buttermilk until the dough just comes together. Turn out the dough onto a floured surface and fold it into thirds three times to create layers.
  8. Roll the dough into a rectangle, cut it into squares, and place them on top of the beef filling in the baking dish.
  9. Bake in the preheated oven for 25–30 minutes, or until the filling is bubbly and the biscuits are golden brown.

Notes

For extra flavor, use high-quality beef broth. Vegetarians can substitute beef with mushrooms or lentils.
