Ingredients
- 3 Tbsp. Butter
- 1/2 Medium Onion, Finely Chopped
- 3 stalks Celery, Thinly Sliced
- 3 Large Carrots, Peeled and Thinly Sliced
- 3 cloves Garlic, Minced
- 6 Tbsp. All-purpose Flour
- Salt and Pepper, to taste
- 3 cups Beef Broth
- 3/4 cup Heavy Cream
- 3 Tbsp. Chopped Fresh Parsley
- 3 cups Frozen Sweet Peas
- 4 cups Shredded or Diced Cooked Beef
- 3 cups All-purpose Einkorn Flour
- 1 1/2 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1 tsp. Salt
- 1/4 tsp. Freshly Ground Black Pepper
- 1/4 tsp. Dried Thyme
- 1/4 tsp. Dried Rosemary
- 1/2 tsp. Dried Parsley
- 8 Tbsp. Cold Butter, Sliced
- 3/4 cup Buttermilk or more if needed
Instructions
- Preheat the oven to 375°F (190°C).
- Melt the butter over medium heat in a large skillet. Add the chopped onion, celery, and carrots; sauté until tender, about 5-7 minutes.
- Add the minced garlic and flour, cooking for an additional minute while stirring constantly.
- Gradually whisk in the beef broth and heavy cream, bringing the mixture to a boil while stirring occasionally.
- Season with salt and pepper, then stir in the chopped parsley, frozen peas, and cooked beef. Pour the filling into a 13×9-inch baking dish.
- To make the biscuit dough, combine the Einkorn flour, baking powder, baking soda, salt, black pepper, thyme, rosemary, and dried parsley in a food processor. Add the sliced cold butter and pulse until the mixture resembles coarse crumbs.
- Mix in the buttermilk until the dough just comes together. Turn out the dough onto a floured surface and fold it into thirds three times to create layers.
- Roll the dough into a rectangle, cut it into squares, and place them on top of the beef filling in the baking dish.
- Bake in the preheated oven for 25–30 minutes, or until the filling is bubbly and the biscuits are golden brown.
Notes
For extra flavor, use high-quality beef broth. Vegetarians can substitute beef with mushrooms or lentils.
