Description
Juicy, charred cubes of beef threaded with peppers and onions, perfect for grilling or broiling.
Ingredients
- 1.5–2 pounds beef (sirloin, strip, or flank steak), cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp soy sauce
- 2 tbsp lemon juice
- 3 minced garlic cloves
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- Salt to taste
- 1 bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
Instructions
- Toss the beef cubes with a marinade of olive oil, soy sauce, lemon juice, garlic, cumin, paprika, black pepper, and salt; chill for 30–60 minutes.
- Thread meat onto skewers, alternating with bell pepper and onion pieces.
- Grill over medium-high heat (450–500°F) for 3–4 minutes per side until internal temperature reaches 125–130°F for medium-rare, or 135°F for medium.
- Rest for 5 minutes before serving.
Notes
For a gluten-free option, use tamari instead of soy sauce. Soak bamboo skewers for 30 minutes before use to prevent burning.
