Tender zucchini boats filled with savory ground beef and melted cheese, perfect for a nutritious meal.
Ingredients
- 2 medium zucchinis
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Slice zucchinis in half lengthwise and scoop out the center.
- Sauté ground beef with onions, garlic, salt, pepper, and herbs until browned.
- Mix in diced tomatoes and half of the cheese.
- Stuff each zucchini half with the beef mixture.
- Place stuffed zucchinis on a baking dish and bake for 20 minutes.
- Sprinkle remaining cheese on top and return to oven until melted and bubbly.
Notes
Serve warm garnished with fresh herbs. Perfectly pairs with salad or garlic bread.
