Description

Tender zucchini boats filled with savory ground beef and melted cheese, perfect for a nutritious meal.


Ingredients

  • 2 medium zucchinis
  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the center.
  3. Sauté ground beef with onions, garlic, salt, pepper, and herbs until browned.
  4. Mix in diced tomatoes and half of the cheese.
  5. Stuff each zucchini half with the beef mixture.
  6. Place stuffed zucchinis on a baking dish and bake for 20 minutes.
  7. Sprinkle remaining cheese on top and return to oven until melted and bubbly.

Notes

Serve warm garnished with fresh herbs. Perfectly pairs with salad or garlic bread.
