Creamy and meaty beef tortellini ready in about 30 minutes, perfect for a comforting weeknight dinner.
Ingredients
- 1 lb fresh or frozen cheese tortellini
- 1 lb lean ground beef
- 2 tablespoons olive oil
- 1 diced onion
- 2 cloves minced garlic
- 28 oz can crushed tomatoes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup heavy cream or reserved pasta water
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Boil tortellini in heavily salted water until al dente (3-5 minutes for fresh, 6-8 for frozen).
- In a skillet, heat olive oil over medium-high heat and brown the ground beef with onion and garlic until caramelized (about 6-8 minutes).
- Add crushed tomatoes, oregano, and red pepper flakes to the skillet and simmer on low for 10 minutes.
- Finish the sauce with heavy cream or reserved pasta water to reach desired consistency.
- Drain the tortellini and toss into the sauce, heating for 1-2 minutes.
- Stir in grated Parmesan cheese and season with salt and black pepper to taste.
Notes
Let the beef brown well for the best flavor and season pasta water generously.
