Description

A delightful baked cod dish topped with a flavorful tomato herb butter, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 cod fillets
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 1 cup diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season cod fillets with salt and pepper.
  3. In a small saucepan, melt butter over medium heat and add diced tomatoes and garlic. Stir in dried herbs.
  4. Let the mixture simmer until flavors meld, about 5 minutes.
  5. Place cod fillets on a greased baking sheet and pour the tomato herb butter mixture over them.
  6. Bake for about 20 minutes or until the cod is flaky and cooked through (should reach an internal temperature of 145°F or 63°C).
  7. Serve hot, garnished with fresh parsley and lemon wedges.
