Ingredients
- 4 cod fillets
- Salt and pepper, to taste
- 2 tablespoons butter
- 1 cup diced tomatoes
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 tablespoon fresh parsley, chopped (for garnish)
- Lemon wedges, for serving
Instructions
- Preheat your oven to 375°F (190°C).
- Season cod fillets with salt and pepper.
- In a small saucepan, melt butter over medium heat and add diced tomatoes and garlic. Stir in dried herbs.
- Let the mixture simmer until flavors meld, about 5 minutes.
- Place cod fillets on a greased baking sheet and pour the tomato herb butter mixture over them.
- Bake for about 20 minutes or until the cod is flaky and cooked through (should reach an internal temperature of 145°F or 63°C).
- Serve hot, garnished with fresh parsley and lemon wedges.
