- 2 large eggplants, sliced into rounds or cubes

 - 1/2 teaspoon black pepper
 - 1 tablespoon dried oregano or thyme
 
Instructions
- Preheat your oven to 400°F (200°C).
 - Slice the eggplant into rounds or cubes.
 - Toss the eggplant with olive oil, salt, pepper, and your favorite herbs.
 - Spread the eggplant evenly on a baking sheet lined with parchment paper.
 - Roast in the oven until golden and tender, about 30-35 minutes.
