Description

Delicious Pumpkin Cream Cheese Muffins are a perfect blend of pumpkin spice and creamy filling, great for fall gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice
  • ½ teaspoon salt
  • 1 cup canned pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs (room temperature)
  • 8 ounces cream cheese (room temperature)
  • ½ cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the dry ingredients: flour, sugar, baking soda, baking powder, pumpkin spice, and salt.
  3. In another bowl, combine the wet ingredients: pumpkin puree, vegetable oil, and eggs.
  4. Gently mix the wet ingredients into the dry until just combined; do not overmix.
  5. For the cream cheese filling, beat the cream cheese and powdered sugar until smooth.
  6. Fill each muffin cup half full with batter, add a dollop of cream cheese filling, then top with more batter.
  7. Bake in preheated oven for about 20 minutes or until a toothpick comes out clean.

Notes

Serve warm with a drizzle of maple syrup or dusting of powdered sugar. Store in an airtight container for up to 3 days.
