Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon pumpkin spice
- ½ teaspoon salt
- 1 cup canned pumpkin puree
- ½ cup vegetable oil
- 2 large eggs (room temperature)
- 8 ounces cream cheese (room temperature)
- ½ cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix the dry ingredients: flour, sugar, baking soda, baking powder, pumpkin spice, and salt.
- In another bowl, combine the wet ingredients: pumpkin puree, vegetable oil, and eggs.
- Gently mix the wet ingredients into the dry until just combined; do not overmix.
- For the cream cheese filling, beat the cream cheese and powdered sugar until smooth.
- Fill each muffin cup half full with batter, add a dollop of cream cheese filling, then top with more batter.
- Bake in preheated oven for about 20 minutes or until a toothpick comes out clean.
Notes
Serve warm with a drizzle of maple syrup or dusting of powdered sugar. Store in an airtight container for up to 3 days.
