Ingredients
- 2 large sweet onions (e.g., Vidalia)
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (e.g., cheddar and mozzarella blend)
- Oil for frying
Instructions
- Slice the onions into thick rings and soak them in buttermilk for at least 30 minutes.
- In a separate bowl, mix together the flour, garlic powder, smoked paprika, salt, and pepper.
- Heat oil in a deep pan to 350°F (175°C).
- Coat soaked onion rings with the seasoned flour, then with the shredded cheese.
- Fry the onion rings in batches until golden brown, about 3-4 minutes per batch.
- Remove and drain on paper towels before serving.
Notes
Serve with ranch or spicy aioli for dipping. Best enjoyed fresh but can be stored in the fridge for up to 3 days.
