Description

A comforting and nutritious black bean soup that’s easy to make and packed with flavor.


Ingredients

  • 2 cups black beans (canned or cooked)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 jalapeño, chopped (optional)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. Sauté onion and garlic in a heavy-bottom pot over medium heat until fragrant and golden.
  2. Add black beans, vegetable broth, cumin, oregano, salt, black pepper, and jalapeño (if using).
  3. Bring to a boil, then reduce heat and let it simmer for 30 minutes, allowing flavors to meld.
  4. Use an immersion blender for a smoother texture, or leave it chunky.
  5. Serve garnished with cilantro and lime wedges.

Notes

For a creamier consistency, blend half of the soup and mix it back in. Store leftovers in an airtight container for up to 5 days.
