A comforting and nutritious black bean soup that’s easy to make and packed with flavor.
Ingredients
- 2 cups black beans (canned or cooked)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 jalapeño, chopped (optional)
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Sauté onion and garlic in a heavy-bottom pot over medium heat until fragrant and golden.
- Add black beans, vegetable broth, cumin, oregano, salt, black pepper, and jalapeño (if using).
- Bring to a boil, then reduce heat and let it simmer for 30 minutes, allowing flavors to meld.
- Use an immersion blender for a smoother texture, or leave it chunky.
- Serve garnished with cilantro and lime wedges.
Notes
For a creamier consistency, blend half of the soup and mix it back in. Store leftovers in an airtight container for up to 5 days.
