Ingredients
- 2 cups all-purpose flour
- 2 cups sugar (or coconut sugar)
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 large eggs (or flax eggs for vegan)
- 1 cup buttermilk (or thinned yogurt)
- 1/2 cup vegetable oil (or melted coconut oil)
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 tablespoon black gel food coloring
- 1 cup unsalted butter (softened)
- 4 cups powdered sugar (sifted)
- 1/4 cup heavy cream
- 1 tablespoon red gel food coloring
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, whisk the eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
- Gradually add wet ingredients to dry ingredients and mix until just combined.
- Stir in boiling water carefully until the batter is smooth.
- Add the black gel food coloring and mix until evenly distributed.
- Pour the batter into the prepared pans and bake for 30-35 minutes until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- To make the icing, beat the softened butter until creamy, then gradually add powdered sugar.
- Add heavy cream and red gel food coloring, mixing until desired consistency.
- Once the cakes are cool, layer with icing and frost the top and sides of the cake.
