Description

A delightful twist on traditional waffles, combining cornbread flavors with a spicy kick from jalapeños and rich cheddar cheese.


Ingredients

  • 1 cup cornmeal (yellow or white)
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • 1 cup shredded sharp cheddar cheese
  • 12 jalapeños, seeded and finely chopped
  • 1 tablespoon honey (optional)
  • Butter or oil spray, for greasing


Instructions

  1. Preheat the waffle iron and grease it with butter or oil spray.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, then stir in buttermilk, melted butter, and honey (if using).
  4. Pour the wet mixture into the dry mixture and stir until just combined, being careful not to overmix.
  5. Fold in the cheddar cheese and chopped jalapeños.
  6. Pour batter into the preheated waffle iron and cook for 4–6 minutes until golden and crispy.
  7. Serve immediately or keep warm in a 200°F oven until ready to eat.

Notes

Add toppings like butter and maple syrup for sweetness, or sour cream for a spicy bite. Store leftovers in an airtight container.
