Description
A delightful twist on traditional waffles, combining cornbread flavors with a spicy kick from jalapeños and rich cheddar cheese.
Ingredients
- 1 cup cornmeal (yellow or white)
 - 1 cup all-purpose flour
 - 1 tablespoon baking powder
 - 1/2 teaspoon baking soda
 - 1/2 teaspoon salt
 - 1 1/4 cups buttermilk
 - 2 large eggs
 - 4 tablespoons unsalted butter, melted
 - 1 cup shredded sharp cheddar cheese
 - 1–2 jalapeños, seeded and finely chopped
 - 1 tablespoon honey (optional)
 - Butter or oil spray, for greasing
 
Instructions
- Preheat the waffle iron and grease it with butter or oil spray.
 - In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
 - In another bowl, whisk eggs, then stir in buttermilk, melted butter, and honey (if using).
 - Pour the wet mixture into the dry mixture and stir until just combined, being careful not to overmix.
 - Fold in the cheddar cheese and chopped jalapeños.
 - Pour batter into the preheated waffle iron and cook for 4–6 minutes until golden and crispy.
 - Serve immediately or keep warm in a 200°F oven until ready to eat.
 
Notes
Add toppings like butter and maple syrup for sweetness, or sour cream for a spicy bite. Store leftovers in an airtight container.
