Ingredients
- 4 slices of bread
- 2 eggs
- 2 slices of cheese (cheddar, Gruyère, or mozzarella)
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Whisk together eggs, seasoning with salt and pepper.
- In a skillet, melt 1 tablespoon of butter and pour in the eggs, scrambling gently until just set.
- Butter one side of each slice of bread and layer cheese on the unbuttered side.
- Pile scrambled eggs on top of the cheese, add more cheese, and top with a second slice of bread.
- Grill the sandwiches in the skillet until golden brown and cheese is melted.
