Description

A fresh and colorful salad packed with nutrients and a delicious mix of flavors and textures.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup sunflower seeds
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the broccoli, cauliflower, cherry tomatoes, red onion, feta cheese, olives, and sunflower seeds.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or chill in the refrigerator for 10 minutes before serving.

Notes

For a creamier dressing, mix in some Greek yogurt. The salad can be stored in an airtight container in the refrigerator for about 3 to 5 days.
