Description

A delightful fusion of sweet and savory, this Brown Sugar Pineapple Chicken combines juicy chicken with caramelized brown sugar and tangy pineapple for a mouthwatering dish.

Ingredients

  • 1 lb chicken thighs (boneless)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 1 cup fresh pineapple chunks
  • Fresh cilantro (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. Marinate chicken thighs in a mixture of brown sugar, soy sauce, and pineapple juice for at least 30 minutes.
  2. Heat a skillet over medium heat and sauté the marinated chicken until golden brown.
  3. Add the fresh pineapple chunks to the skillet.
  4. Pour the remaining marinade into the skillet to create a glaze, cooking until it thickens slightly.
  5. Let the chicken rest for a few minutes before serving.
  6. Serve over jasmine rice or quinoa, garnished with cilantro and lime wedges.

Notes

For added flavor, use smoked paprika and ensure to rest chicken after cooking for juiciness.
