Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups diced fresh tomatoes
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 cup mozzarella cheese, shredded
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper, then place them in a baking dish.
- Bake the chicken for 20-25 minutes, until cooked through.
- In a bowl, combine diced tomatoes, garlic, basil, balsamic vinegar, and olive oil.
- Once the chicken is cooked, top each breast with the bruschetta mixture and sprinkle mozzarella cheese on top.
- Return the dish to the oven and bake for an additional 10 minutes, until the cheese is melted and golden.
- Serve immediately, garnished with additional basil if desired.
