Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups diced fresh tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper, then place them in a baking dish.
  3. Bake the chicken for 20-25 minutes, until cooked through.
  4. In a bowl, combine diced tomatoes, garlic, basil, balsamic vinegar, and olive oil.
  5. Once the chicken is cooked, top each breast with the bruschetta mixture and sprinkle mozzarella cheese on top.
  6. Return the dish to the oven and bake for an additional 10 minutes, until the cheese is melted and golden.
