Ingredients
- 1 pound Andouille or smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 can diced tomatoes
- 4 cups shredded cabbage
- Hot sauce, to taste
- Lemon juice, to taste
- Chopped parsley, for garnish
Instructions
- In a large Dutch oven, brown the sausage over medium-high heat.
- Add the onion, bell pepper, and celery, cooking until softened.
- Stir in garlic and Cajun seasoning, toasting briefly.
- Add the rice, stirring to coat it in the aromatics for 1 minute.
- Pour in the chicken broth and diced tomatoes, then add the shredded cabbage.
- Cover and simmer gently for 18–22 minutes until the rice is tender.
- Finish with hot sauce, lemon juice, and chopped parsley before serving.
Notes
Add cabbage in two stages for best texture. Adjust hot sauce to taste for desired spiciness.
