Ingredients
- 1.5 lb (700 g) chicken tenders or thin-sliced chicken breasts
- 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon)
- 1 tsp Cajun seasoning
- 1 cup all-purpose flour
- 2 tsp Cajun seasoning
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1-2 beaten eggs
- 2-3 cups vegetable or peanut oil for frying
Instructions
- Marinate chicken tenders in buttermilk and Cajun seasoning for extra tenderness.
- Dredge chicken in seasoned flour, dip in beaten egg, and then back into the flour.
- Heat oil to 350–375°F (175–190°C) in a skillet.
- Fry chicken tenders for 3–5 minutes per side until golden and internal temperature reaches 165°F (74°C).
- Drain on a wire rack to keep bottoms crisp.
- Serve with dipping sauce and lemon wedges if desired.
Notes
For extra crunch, add panko to the flour or do a triple-dredge. Resting the coated chicken helps the breading adhere.
