Ingredients

  • 1 cup stone-ground grits
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 cloves garlic, minced
  • 1/2 cup onion, chopped
  • 4 cups water or broth
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh parsley or green onions for garnish


Instructions

  1. In a saucepan, bring 4 cups of water or broth to a boil. Gradually stir in the stone-ground grits, reduce heat, and simmer, stirring frequently until creamy.
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until fragrant.
  3. Add shrimp and Cajun seasoning to the skillet, cooking until shrimp turn pink and opaque, about 2-3 minutes per side.
  4. Serve the creamy grits topped with the sautéed shrimp, garnishing with chopped parsley or green onions.
