Ingredients
- 1 lb chicken breasts
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced

- 1/2 tsp paprika
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 4 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Chopped green onions for garnish
- Cilantro for garnish
- Sour cream for serving
Instructions
- Sauté diced onions, bell peppers, and garlic in a large pot until soft and fragrant.
- Add Cajun seasoning, cumin, and paprika, toasting for a minute.
- Mix in chicken breasts and let cook through.
- Shred the cooked chicken, then stir in black beans, corn, and chicken broth.
- Let the chili simmer to meld the flavors, then finish with heavy cream.
- Serve garnished with chopped green onions, cilantro, and a dollop of sour cream.
