Ingredients

  • 1 lb chicken breasts
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Cilantro for garnish
  • Sour cream for serving


Instructions

  1. Sauté diced onions, bell peppers, and garlic in a large pot until soft and fragrant.
  2. Add Cajun seasoning, cumin, and paprika, toasting for a minute.
  3. Mix in chicken breasts and let cook through.
  4. Shred the cooked chicken, then stir in black beans, corn, and chicken broth.
  5. Let the chili simmer to meld the flavors, then finish with heavy cream.
  6. Serve garnished with chopped green onions, cilantro, and a dollop of sour cream.

Notes
