A delicious cheesecake combining creamy richness with caramelized apples and a crunchy oat topping.
Ingredients
- 1 1/2 cups oats
- 1/2 cup brown sugar
- 1/2 cup butter, melted
- 2 packages (16 oz) cream cheese
- 1 cup sugar
- 4 eggs
- 4 cups sliced apples (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar for apples
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 cup caramel sauce, plus more for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix oats, brown sugar, and melted butter to form the crust. Press into the bottom of a springform pan.
- In a mixing bowl, beat cream cheese and sugar until smooth, then add eggs, one at a time, followed by vanilla and cinnamon.
- Pour the cheesecake filling over the crust and bake for 50 minutes.
- While the cheesecake is baking, sauté apples with butter and brown sugar until caramelized.
- Once the cheesecake has cooled slightly, top it with the caramelized apples and sprinkle with any remaining oat mixture.
- Drizzle caramel sauce on top before serving.
Notes
For best results, allow the cheesecake to cool in the oven after baking to prevent cracking.
