Description

A delicious cheesecake combining creamy richness with caramelized apples and a crunchy oat topping.


Ingredients

  • 1 1/2 cups oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 2 packages (16 oz) cream cheese
  • 1 cup sugar
  • 4 eggs
  • 4 cups sliced apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar for apples
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 cup caramel sauce, plus more for serving


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix oats, brown sugar, and melted butter to form the crust. Press into the bottom of a springform pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth, then add eggs, one at a time, followed by vanilla and cinnamon.
  4. Pour the cheesecake filling over the crust and bake for 50 minutes.
  5. While the cheesecake is baking, sauté apples with butter and brown sugar until caramelized.
  6. Once the cheesecake has cooled slightly, top it with the caramelized apples and sprinkle with any remaining oat mixture.
  7. Drizzle caramel sauce on top before serving.

Notes

For best results, allow the cheesecake to cool in the oven after baking to prevent cracking.
