Description

Delightful cookies with a rich cream cheese filling and the sweetness of carrots.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots (about 3 medium carrots)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream the butter, granulated sugar, and brown sugar until fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in the grated carrots.
  7. In a separate bowl, combine the softened cream cheese and powdered sugar until smooth.
  8. Scoop out cookie dough onto the baking sheet, placing them about 2 inches apart.
  9. Make a small indentation in the center of each cookie and fill with about 1 tsp of the cream cheese mixture.
  10. Bake for 12-15 minutes until lightly golden around the edges.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to 5 days. Freeze for longer storage.
