Ingredients
- 1 cup cream cheese, softened
- 1/2 cup butter, softened
- 1 cup sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 cup oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1 1/2 cups grated carrots
- Optional: 1/2 cup walnuts or raisins
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat together cream cheese, butter, and sugar until fluffy and smooth.
- Add in the eggs, mixing until fully incorporated.
- In a separate bowl, combine flour, oats, baking powder, and spices.
- Gradually add dry ingredients to the wet mixture and mix until just combined.
- Fold in grated carrots and optional mix-ins if desired.
- Shape dough into balls and place on the prepared baking sheet.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow cookies to cool before serving.
