Description

Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 cup oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 1/2 cups grated carrots
  • Optional: 1/2 cup walnuts or raisins


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together cream cheese, butter, and sugar until fluffy and smooth.
  3. Add in the eggs, mixing until fully incorporated.
  4. In a separate bowl, combine flour, oats, baking powder, and spices.
  5. Gradually add dry ingredients to the wet mixture and mix until just combined.
  6. Fold in grated carrots and optional mix-ins if desired.
  7. Shape dough into balls and place on the prepared baking sheet.
