Ingredients

  • 1 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed light brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup semi-sweet chocolate chunks
  • 1/2 cup rainbow sprinkles
  • 1 cup birthday cake-flavored sandwich cookies, roughly chopped
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Additional rainbow sprinkles for topping


Instructions

  1. Preheat the oven to 350°F. Line a 9×13-inch sheet pan with parchment paper.
  2. In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  3. Add eggs one at a time, whisking thoroughly after each addition. Stir in vanilla extract.
  4. Sift in flour, cocoa powder, baking powder, and salt. Fold gently until just combined.
  5. Fold in chocolate chunks, rainbow sprinkles, and chopped cookies until evenly distributed.
  6. Spread batter in the prepared pan and bake for 23-25 minutes, or until a toothpick comes out with moist crumbs.
  7. Let cool completely on a wire rack.
  8. Beat softened butter until creamy, then gradually add powdered sugar, milk, vanilla, and salt until fluffy.
  9. Spread frosting over cooled brownies and top with extra sprinkles.
  10. Cut into squares and serve.
