Ingredients
- 1 cup unsalted butter, melted
- 1 1/2 cups granulated sugar
- 1/2 cup packed light brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup semi-sweet chocolate chunks
- 1/2 cup rainbow sprinkles
- 1 cup birthday cake-flavored sandwich cookies, roughly chopped
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar, sifted
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Additional rainbow sprinkles for topping
Instructions
- Preheat the oven to 350°F. Line a 9×13-inch sheet pan with parchment paper.
- In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
- Add eggs one at a time, whisking thoroughly after each addition. Stir in vanilla extract.
- Sift in flour, cocoa powder, baking powder, and salt. Fold gently until just combined.
- Fold in chocolate chunks, rainbow sprinkles, and chopped cookies until evenly distributed.
- Spread batter in the prepared pan and bake for 23-25 minutes, or until a toothpick comes out with moist crumbs.
- Let cool completely on a wire rack.
- Beat softened butter until creamy, then gradually add powdered sugar, milk, vanilla, and salt until fluffy.
- Spread frosting over cooled brownies and top with extra sprinkles.
- Cut into squares and serve.
