Description
A quick, one-pan meal that layers tender beef, colorful peppers, and gooey cheese for a delicious weeknight dinner.
Ingredients
- 1 lb flank steak or sirloin, sliced thinly
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 cups shredded cheese (provolone and cheddar recommended)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh lime juice for serving
Instructions
- Heat olive oil in a large skillet over high heat.
- Season the sliced beef with garlic powder, paprika, salt, and pepper.
- Add the beef to the skillet and sear until browned, about 3-4 minutes.
- Remove the beef from the skillet and set aside.
- Add the sliced bell peppers and onions to the skillet and sauté for 2-3 minutes.
- Return the beef to the skillet and combine with the vegetables.
- Top the mixture with shredded cheese and cover the skillet until the cheese melts, about 2-3 minutes.
- Serve with a squeeze of fresh lime juice and warm tortillas or over rice.
Notes
For a vegetarian option, substitute beef with mushrooms or plant-based meat. Add jalapeños for extra heat.
