Description

A quick, one-pan meal that layers tender beef, colorful peppers, and gooey cheese for a delicious weeknight dinner.


Ingredients

  • 1 lb flank steak or sirloin, sliced thinly
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cups shredded cheese (provolone and cheddar recommended)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh lime juice for serving


Instructions

  1. Heat olive oil in a large skillet over high heat.
  2. Season the sliced beef with garlic powder, paprika, salt, and pepper.
  3. Add the beef to the skillet and sear until browned, about 3-4 minutes.
  4. Remove the beef from the skillet and set aside.
  5. Add the sliced bell peppers and onions to the skillet and sauté for 2-3 minutes.
  6. Return the beef to the skillet and combine with the vegetables.
  7. Top the mixture with shredded cheese and cover the skillet until the cheese melts, about 2-3 minutes.
  8. Serve with a squeeze of fresh lime juice and warm tortillas or over rice.

Notes

For a vegetarian option, substitute beef with mushrooms or plant-based meat. Add jalapeños for extra heat.
