Ingredients

  • 1 pound top sirloin, sliced into thin pieces
  • 1/2 yellow onion, chopped
  • 3 bell peppers, cut into strips
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 8 ounces tomato sauce
  • 2 cups Minute Rice
  • 1 packet fajita seasoning
  • Velveeta cheese dip or any melty cheese dip, to taste


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add chopped onion and bell pepper slices, cooking them until they soften slightly.
  2. Add the steak strips and sprinkle with fajita seasoning. Stir and cook until steak is done to your liking.
  3. Stir in the Minute Rice, tomato sauce, and chicken broth, ensuring everything is well mixed.
  4. Let the mixture simmer on medium heat, following the cooking instructions for your type of rice and adding liquid if it appears dry.
  5. When the rice is fluffy and the pan isn’t too watery, top generously with warm cheese dip and let it melt.
  6. Spoon onto plates while hot and serve immediately for the best flavor and texture.
