- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1 cup cherry tomatoes, halved
- Salt, to taste
- Pepper, to taste
- Fresh basil, for garnish
- Parmesan cheese, for garnish
Instructions
- Cook the tortellini according to package instructions until al dente, about 4-5 minutes.
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
- Add chopped zucchini, bell pepper, and cherry tomatoes to the skillet.
- Sauté the vegetables until just tender, about 3-4 minutes.
- Combine the cooked tortellini with the sautéed vegetables in the skillet.
- Season with salt, pepper, and fresh basil, then top with parmesan cheese before serving.
