  • 2 tbsp olive oil
  • 1 zucchini, chopped
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • Salt, to taste
  • Pepper, to taste
  • Fresh basil, for garnish
  • Parmesan cheese, for garnish


Instructions

  1. Cook the tortellini according to package instructions until al dente, about 4-5 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Add chopped zucchini, bell pepper, and cherry tomatoes to the skillet.
  4. Sauté the vegetables until just tender, about 3-4 minutes.
  5. Combine the cooked tortellini with the sautéed vegetables in the skillet.
  6. Season with salt, pepper, and fresh basil, then top with parmesan cheese before serving.
