Description

Delicious burritos stuffed with seasoned beef, crispy potatoes, and gooey cheese, perfect for family dinners or cozy nights in.


Ingredients

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 3 large russet potatoes, peeled and diced
  • 1 tablespoon minced garlic
  • 0.5 cup water
  • 1 teaspoon dried cilantro
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 1 pound ground beef
  • 0.5 cup taco sauce
  • 5 large flour tortillas
  • 1 cup nacho cheese sauce


Instructions

  1. Peel and wash the potatoes, then chop into small cubes.
  2. In a large bowl, toss the cubed potatoes with paprika, garlic powder, black pepper, and salt. Add olive oil and mix well.
  3. Place seasoned potatoes in the air fryer basket at 400°F for about 25 minutes, shaking the basket occasionally.
  4. While the potatoes cook, heat a skillet over medium-high heat. Add ground beef, breaking it apart as it cooks. Season with salt, black pepper, chili powder, cumin, dried cilantro, paprika, and minced garlic.
  5. Once beef is browned, drain excess fat, add water, and let it simmer for a few minutes.
  6. Keep the beef warm on low heat while you finish cooking the potatoes.
  7. To assemble, layer nacho cheese, beef, taco sauce, and crispy potatoes on a tortilla. Add more nacho cheese if desired.
  8. Fold the tortilla sides and roll tightly. Toast seam-side down in a skillet over medium-high heat until golden brown.

Notes

For added crunch, fry the burritos in oil after toasting. Customize with beans, corn, or veggies. For spice, add jalapeños or hot sauce.
