- 1 lb lean ground beef
- 1 medium onion, chopped

- 1 packet taco seasoning
- 1 can enchilada sauce
- 2 cups uncooked pasta (small shells or elbows)
- 3 cups beef broth
- 2 cups shredded cheese (cheddar or Mexican blend)
- Fresh cilantro, for garnish (optional)

Instructions
- Brown the ground beef in a large skillet over medium heat until cooked through; drain excess grease.
- Add onion and garlic to the skillet and sauté until fragrant.
- Stir in taco seasoning and enchilada sauce until well combined.
- Add uncooked pasta and beef broth; bring to a simmer.
- Cook until pasta is tender, stirring occasionally.
