Description

Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can enchilada sauce
  • 2 cups uncooked pasta (small shells or elbows)
  • 3 cups beef broth
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish (optional)
  • Green onions, for garnish (optional)
  • Fresh lime, for garnish (optional)


Instructions

  1. Brown the ground beef in a large skillet over medium heat until cooked through; drain excess grease.
  2. Add onion and garlic to the skillet and sauté until fragrant.
  3. Stir in taco seasoning and enchilada sauce until well combined.
  4. Add uncooked pasta and beef broth; bring to a simmer.
  5. Cook until pasta is tender, stirring occasionally.
  6. Remove from heat and fold in shredded cheese until melted.
