Description

Comforting burritos filled with creamy, cheesy potatoes, perfect for a cozy dinner or gathering.


Ingredients

  • 4 large potatoes (Yukon Gold or Russet), diced
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 4 large tortillas
  • Salt to taste
  • Pepper to taste


Instructions

  1. Boil diced potatoes in salted water until tender, about 10-15 minutes.
  2. In a bowl, mix shredded cheese, garlic powder, cumin, and milk.
  3. Once potatoes are cooked, mash them lightly and mix in the cheese until melted.
  4. Fill each tortilla with the potato filling and roll them up tightly.
  5. Bake in a preheated oven at 350°F (175°C) for 10-15 minutes until golden and crispy.

Notes

Serve with salsa, guacamole, or sour cream as a dip. Customize the cheese blend and add protein for a heartier meal.
