Ingredients
- 4 large potatoes (Yukon Gold or Russet), diced
- 1 cup shredded cheese (cheddar and Monterey Jack blend)
- 1/4 cup milk
- 1 tsp garlic powder
- 1 tsp cumin
- 4 large tortillas
- Salt to taste
- Pepper to taste
Instructions
- Boil diced potatoes in salted water until tender, about 10-15 minutes.
- In a bowl, mix shredded cheese, garlic powder, cumin, and milk.
- Once potatoes are cooked, mash them lightly and mix in the cheese until melted.
- Fill each tortilla with the potato filling and roll them up tightly.
- Bake in a preheated oven at 350°F (175°C) for 10-15 minutes until golden and crispy.
Notes
Serve with salsa, guacamole, or sour cream as a dip. Customize the cheese blend and add protein for a heartier meal.
