Ingredients
- Graham cracker crumbs
- 8 oz cream cheese, room temperature
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp lemon zest
- Cherry pie filling for topping
Instructions
- Press graham cracker crumbs into mini muffin liners to form a crust.
- Blend cream cheese, sugar, egg, vanilla, and lemon zest until smooth.
- Spoon or pipe the filling into the crusts, leaving space at the top.
- Bake at 325°F (163°C) for 18-22 minutes until the centers are set.
- Cool on a rack for 30 minutes, then refrigerate for at least 2 hours.
