A delightful dessert combining cherry and lime flavors in a creamy cheesecake, perfect for summer gatherings.
Ingredients
- 1.5 cups Graham Cracker Crumbs
 - 0.5 cups Granulated Sugar
 - 0.5 cups Unsalted Butter, melted
 - 16 ounces Cream Cheese, softened
 - 1 cup Sour Cream
 - 0.33 cups Lime Juice, freshly squeezed
 - 1 unit Lime Zest
 - 21 ounces Cherry Pie Filling
 - 1 cup Whipped Cream, for garnish
 
Instructions
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
 - Press the crumb mixture into the bottom of a 9-inch springform pan and set aside.
 - In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
 - Add sour cream, lime juice, and lime zest to the cream cheese. Beat until well combined and smooth.
 - Gradually add granulated sugar, continuing to beat until fully incorporated.
 - Pour the filling over the prepared crust and smooth the top.
 - Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
 - Remove from the springform pan and top with cherry pie filling.
 - Serve with whipped cream on top and enjoy!
 
Notes
For best results, allow the cream cheese to soften fully before mixing and use freshly squeezed lime juice. Chill the cheesecake overnight for the best texture.
