Description

A comforting casserole combining tender chicken, fluffy rice, and savory flavors.


Ingredients

  • 2 cups cooked long-grain rice
  • 2 cups cooked shredded chicken (rotisserie recommended)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup mixed vegetables (e.g., broccoli, carrots)
  • 1 cup shredded cheese (optional, for topping)
  • Salt and pepper, to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Partially cook the rice according to package instructions.
  3. In a large bowl, combine the cooked rice, shredded chicken, cream soups, and mixed vegetables.
  4. Season with salt and pepper, and mix well.
  5. Transfer the mixture to a baking dish, spreading it evenly.
  6. Bake in the preheated oven for about 45 minutes, or until bubbly and golden on top.
  7. If using cheese, sprinkle it on top during the last 10 minutes of baking.
  8. Allow to cool slightly before serving.

Notes

For a cheesier casserole, mix in some shredded cheese into the dish before baking or add additional cheese on top.
