A comforting casserole combining tender chicken, fluffy rice, and savory flavors.
Ingredients
- 2 cups cooked long-grain rice
- 2 cups cooked shredded chicken (rotisserie recommended)
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 cup mixed vegetables (e.g., broccoli, carrots)
- 1 cup shredded cheese (optional, for topping)
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Partially cook the rice according to package instructions.
- In a large bowl, combine the cooked rice, shredded chicken, cream soups, and mixed vegetables.
- Season with salt and pepper, and mix well.
- Transfer the mixture to a baking dish, spreading it evenly.
- Bake in the preheated oven for about 45 minutes, or until bubbly and golden on top.
- If using cheese, sprinkle it on top during the last 10 minutes of baking.
- Allow to cool slightly before serving.
Notes
For a cheesier casserole, mix in some shredded cheese into the dish before baking or add additional cheese on top.
